Ingredients

  1. 1 kg beef belly (some fat is preferred for a crispier texture)
  2. 3 to 4 tablespoons cooking wine or white vinegar
  3. 2 stalks green onions

Marinade

  1. 1 1/2 teaspoons salt
  2. 2 teaspoons sugar
  3. 1/2 teaspoon Chinese five-spice or seven-spice
  4. 1/4 teaspoon garlic powder
  5. 1/4 teaspoon ground white pepper

For the rub:

  • 1 tablespoon coarse or rock salt

Directions

  • Rub the beef with the coarse salt and let it marinate for half an hour to an hour.
  • In a deep pot, boil enough water to cover the meat. Add the green onions and cooking wine (or vinegar), then add the meat and boil for 10 minutes over medium heat to reduce any excess odor.
  • Combine the marinade ingredients well in a small bowl.
  • Remove the meat from the pot and pierce its surface with a metal skewer or fork to create small holes that will help the fat escape during grilling.
  • Dry the meat thoroughly with paper towels, then rub the marinade mixture on all sides except the fat layer or outer crust.
  • Place the meat on a plate, cover it with plastic wrap, fat side up, and let it marinate in the refrigerator overnight.
  • Remove the meat from the refrigerator an hour before cooking.
  • Preheat the air fryer to 180°C. Place the meat fat-side down for 20 minutes, then turn it over and grill for another 20 minutes.
  • Once cooked, heat a little oil in a frying pan and fry the fat-side down until it puffs up and becomes crispy.
